Pizza, pizza!



Mmmm I love pizza night at the Olson/Iwaskow household!

I found this recipe about 3 years ago and have never gone back. It is from the lovely cookbook Eat, Shrink & Be Merry. This is by far, the best whole-wheat dough you will ever encounter and it really is so easy!


Whole Wheat Pizza Dough

- 1 cup All-purpose flour
- 1/2 cup Whole wheat flour
- 2 tbsp Flax meal or ground flaxseed
- 2 1/4 tsp Quick-rising yeast
- 1/2 tsp Salt (I usually omit this)
- 2/3 cup Very warm water
- 2 tsp Olive oil
- 2 tsp Honey
  1. In a medium bowl, combine both flours, flax meal, yeast and salt. Mix well.
  2. Measure warm water in measuring cup, then stir in olive oil and honey. Pour mixture over dry ingredients and mix using a wooden spoon. Turn dough out onto a lightly floured surface. Knead for 2 minutes. Spray another medium bowl with olive oil spray and place dough inside. Cover with plastic wrap. Let rise in a warm place until doubled in size, about 20 minutes. (I usually throw everything together in the bread machine and put it on the dough cycle!)
  3. Meanwhile, spray a 12-inch pizza pan with olive oil and preheat oven to 425O
  4. When dough has risen, roll dough onto the prepared pizza pan. Top with your favorite topping at this point and bake for about 15 minutes (make sure to turn the broiler on after 15 minutes and get the cheese all browned, bubbly and yummy!)
  5. Enjoy!





Toppings of choice: Bruschetta, caramelized onions,
mushrooms, organic marinara sauce, bison salami and light CHEESE!
